B K Paneer

Being on Sadar Bazar Main Road means dealing with a lot of noise and people every single day. B K Paneer is right in the thick of it. We start our day while most people are still sleeping, around four or five in the morning, because that’s when the fresh milk and supplies arrive. The shop always feels a bit damp because we are constantly washing the floors and the counters to keep everything clean. It’s a cold place to work, especially in the winter, because of all the big fridges we have to keep the paneer fresh. We don't have much room for anything else, just the scales, some knives, and the packing paper. You can always smell the dairy in the air here. People stop by on their way home from the market, and we spend our time weighing out portions and chatting about the weather or the price of things. The traffic outside is never-ending, with horns honking and rickshaws pushing past. We don't have a fancy storefront or any marketing experts. It’s just us behind the counter. Sometimes we get a bit tired of the hustle, but it’s what we know. By the time evening rolls around, the stock is usually low and we start thinking about cleaning up for the next day. It’s just a basic shop on a busy street, doing what we’ve always done for a long time.
