Our place, Indijoe, is situated right on National Highway - 8 near Dlf Phase III. Being on the highway means we see all sorts of people, from travelers passing through to folks who live right here in the DLF area. The noise from the traffic is constant, but you get used to it after a few days. We spend our time checking the tables and making sure the menus aren't torn or dirty. It’s a big space and it takes a lot of effort to keep it looking okay. The lighting can be a bit tricky sometimes, and we’re often replacing bulbs. We don't have a scripted way of talking to people. We just say hello and help them find a seat. The kitchen crew stays busy with the orders coming in from the highway travelers who are usually in a bit of a hurry. We try to keep up with the pace. It’s not always easy, especially when a large group shows up without any warning. We just do our work, clear the plates, and prepare for the next shift. It’s a practical kind of place. We don't have fancy decorations or big promises. Just a spot on the highway where you can stop for a while. We’ve been here long enough that we know most of the shortcuts around Phase III. It’s just a normal day of work for us.
