I work in the F&B department here at Hotel The Bristol in Gurgaon. My name is Pankaj Kumar, and I’ve been around the place for a while. The hotel is one of those landmarks people know, but when you work in the back in the service department, it’s a lot different. We spend most of our time making sure the restaurants and events have what they need. It’s a lot of running around, honestly. The kitchen is always hot and the staff is always moving fast. We don't really see the glossy stuff they put in brochures. For us, it’s just about the daily inventory and making sure the tables are set. Gurgaon is a busy city, and the hotel gets its fair share of people coming in for dinners or meetings. Our department is tucked away in the service areas. It’s not glamorous. We deal with crates, dishes, and schedules all day long. Sometimes we have a moment to sit down in the staff area and have a quick tea. It’s hard work, but we are a good group. We don't use big words to describe what we do. We just make sure people get their food and drinks on time. It’s a lot of coordination between the kitchen and the floor. Every day is a bit of a challenge but we just get on with it. It is just the way the hotel keeps running behind the scenes.
