We've been here in Sector 56 for a while now. The kitchen gets busy around four in the morning when the first shift comes in to start prep. You can hear the knives on the boards and the large pots rattling. It’s not a fancy setup at Jalyavu Towers, just a place where we get the work done. We handle a lot of different orders throughout the day. Some days it’s just small lunch boxes for the nearby offices, and other times we are packing up big containers for events. There’s always someone cleaning or chopping something. The floor stays a bit wet from all the washing. We try to keep things organized, but when three orders go out at once, it gets a bit hectic. People around here know us from the smells coming out of the vents. It’s mostly local staff working here, people who live nearby and walk to work. We spend a lot of time checking the ingredient lists and making sure the spice levels are okay. It’s not always quiet, especially when the delivery vans are backing up to the door at D-915. We just focus on getting the food out on time so nobody is waiting. Sometimes we run out of space in the pantry, so we have to move boxes around constantly. It’s hard work, standing on your feet all day, but we are used to it now. We also have a small office area where we take phone calls and write down the menus for the next week. It’s a bit messy with all the papers, but we know where everything is.
