Durbar

You can find us over at Mayur Vihar Phase I in Pratap Nagar, right at number 166. It’s a pretty standard spot where we spend our time mostly in the back, getting the food ready. The kitchen is always the loudest part of the place, with pots clanking and the fans whirring to get the steam out. We open up early to start chopping and getting the stoves going. The tables out front are simple, just enough for people to sit down and have their meal without any fuss. We don’t go in for fancy decorations or anything that feels too polished. It’s more about the routine of the day. Around noon, the place starts to fill up with people who work nearby or live in the apartments around the corner. We spend a lot of time wiping down the counters and checking the supplies. Some days the delivery truck is late, and we have to shuffle things around, but that’s just how it goes. The neighborhood is fairly quiet in the mornings, but by evening, the street outside gets a bit more crowded with cars and people walking their dogs. We just stay focused on the orders coming in and making sure the floor stays mostly clean. It’s a lot of repetitive work, but we’re used to the rhythm of the kitchen and the steady stream of people coming through the door. We usually close up once the last customer leaves.
