The dust from the grinding gets everywhere, no matter how often we try to sweep it up. We spend our days processing and mixing different ingredients together. It is hard work and the air in the shop can get quite sharp, which makes us sneeze once in a while. We are not a giant corporation with hundreds of staff members. It is just a small group of us who know the daily routine by heart. We usually start early in the morning when the air is still a bit cool.
