You can find our kitchen over on Teg Bahadur Road at 71/1, right in Lane Number 4. It’s a busy part of Dehradun, and finding a spot for the bikes can be a headache sometimes. We spend most of our time working with dough, as you might guess from the name. It is a lot of flour and water and getting your hands messy. The kitchen gets pretty hot when the ovens are going, especially in the summer months. We don't have a fancy storefront with big signs; we just focus on the baking part of the business. It is a small space, so we have to stay organized or we end up tripping over each other. Most of the people working here live nearby and just walk or cycle in. We don't have a lot of rules about how things are done, as long as the work gets finished and the place stays clean. It is a very hands-on job. There is no corporate office telling us what to do, just the daily list of what needs to be baked. Sometimes we try new things just to see if they work, and other times we just stick to what we know. It is a simple way to earn a living. We usually finish up late when the street has finally gone quiet and the last of the trays are washed and dried for the morning.
