Corporate Coffee & Tea Bakes

We set up our little spot here at 32, Thamarai Flat in Annaamalai Nagar a while back and it has been quite a journey since then. Most mornings start pretty early when the air is still a bit cool and we get the ovens going for the day. You can usually smell the tea brewing from down the street if the wind is blowing the right way. It is not a very fancy place but it gets the job done and the regulars seem to like it that way. We spend a lot of time just moving trays around and making sure everything is ready before the morning rush hits. Annaamalai Nagar is a busy area so there is always someone passing by or popping their head in to see what is fresh. Sometimes the place gets a bit cramped with all the boxes and bags of flour sitting around but that is just how a working kitchen looks I guess. We do not have a big team or anything just a few of us who know how to handle the coffee machines and the baking side of things. It is hard work staying on your feet all day but seeing people sit down with a hot cup makes it feel alright. We just keep our heads down and focus on the daily chores like cleaning the counters and checking the stock. It is a simple life here at the flat and we are just glad to be part of the neighborhood.
