Khalsa Patiala Dairy

Khalsa Patiala Dairy sits over in Burail at number 1628. If you live around here, you know it gets really busy, especially early in the morning. We start our day while it is still dark outside because the milk trucks arrive and everything needs to be moved into the coolers before the heat kicks in. The shop isn't fancy at all, just a simple counter and big refrigerators. Because we are constantly washing the milk crates, the floor stays a bit damp, so you have to watch your step. Most of our customers are regulars who have been buying from us for years. They usually just walk in, grab their packets, and talk for a minute about their families or the local news. Running a dairy is a lot of heavy lifting and early hours. Sometimes the delivery is a bit late and we have to tell people to come back in ten minutes. We don't have any big signs or advertisements. The door is just open and people know we are here. A big part of the afternoon is spent cutting up fresh paneer or bagging curd for the evening rush. Burail 1628 is where we spend all our time. It is a very basic life, but it keeps us busy. We are just local people serving the neighborhood, no more and no less. That is just how the dairy operates day after day.
