Our spot at Booth 20 and 21 in Sector 8-B has a specific rhythm to it. Every morning starts quite early because the ovens need time to heat up properly before the first batch of dough goes in. The air in the 8B market is usually quiet at that hour, but inside it is all noise with mixers and metal trays clinking together. We have been working out of these two booths for a long time. The space is a bit tight when we have a big order of cakes to finish, but we managed to fit everything we need. Most of the people who come in are locals who have been living in Sector 8 for years. They usually stop by for a loaf of bread or a quick snack while they are out doing their shopping. The glass display cases get fingerprints on them every five minutes, so someone is always wiping them down with a cloth. We don't have much room for seating, so most people just take their stuff and go. When the afternoon sun hits the front window, it gets really bright in here. We spend a lot of time decorating things by hand, which takes a lot of patience and steady fingers. It is hard work and my back usually aches by the end of the shift, but seeing the shelves empty out at the end of the day is a good feeling.
