Life at Mohali Phase 5 moves pretty quick, especially for us at Gobind Dairy & Sweet. Our day starts much earlier than most people think because the milk arrives before the sun is even up. We have to get everything processed and ready for the morning rush when everyone wants fresh dahi, paneer, or milk for their tea. The back of the shop is where we make the sweets, and it gets quite warm back there with the big pots boiling. We use a lot of milk every single day. My family has been doing this for a long time, so we know the regulars who come by every single morning like clockwork. They don't even have to say anything, we just hand them their usual order. In the evenings, it changes a bit and people come in for sweets or snacks after work. The counters get a bit sticky and we are always wiping things down. It is a lot of heavy lifting with the milk cans and crates. We don't have a big marketing plan or anything, we just focus on making sure the dairy is fresh and the sweets are ready for whoever walks through the door. It is honest work and it keeps us on our toes from five in the morning until we shut down at night. We just try to keep things running smoothly and serve the neighborhood.
