#327-C in Sector 51A is where you will find us. It is a smallish place but we fit everything in somehow. Cakenest India Private Limited is the name on the door. There is usually a lot of flour in the air. Baking and mixing things takes up the whole day. Since the ovens are almost always on, it gets pretty warm in the kitchen area. We have to be careful with the timers because it is easy to forget something when the phone is ringing. Chandigarh summers make the kitchen even hotter, so everyone drinks a lot of water. We are just a group of people who like working with cakes. It is messy work. Aprons are never clean for long around here. There are some shelves for the boxes and a big table for the decorating. Sector 51A is a quiet enough spot. Neighbors can be seen walking their dogs while we are loading up the vans. Sometimes the icing doesn't set right if the humidity is high. Starting over is the only option then. No big corporate office exists here, just our workspace. A couple of computers handle the orders but they usually have fingerprints on the screens. We just keep going until the last cake is out. It is a lot of standing and lifting heavy bags of sugar. Not much free time is available during the day. We usually clean the floor last thing before going home.
