Our place is situated just outside Jassusar Gate, along the Gajner Road. We are quite close to Dagon Ka Mohalla, which is a lively neighborhood in Bikaner. It’s a hot and dusty area, especially in the summers, but that’s just life here. We run Ajay Masala from a simple building on the main road. The traffic goes by all day long, and we are usually inside busy with the spice grinders. It gets quite loud when the machines are running. We don't have a fancy showroom or anything like that. It’s mostly just a workspace. We spend our mornings cleaning the raw materials and the afternoons packing them up. It’s hard work and the air is always full of spice dust, which makes you sneeze if you aren't used to it. We don't have a corporate office or a board of directors. It’s just us doing what we know how to do. The people from the mohalla often stop by to say hello or pick up a small bag of chili powder. We’ve been here long enough that we feel like part of the street. It’s a practical business. We don't have big dreams of becoming a global brand. We just want to make sure the spices we produce are good enough for the local tables. That’s what we do every day. Bikaner is a good place for this kind of thing.
