Omkareshwar Mukhwas Private Limited is tucked away at 188, Indus Empire, which is near Rajiv Gandhi College in Bawadiya Kalan. If you walk by, you might catch the smell of fennel seeds or dried fruits. Mukhwas is what we do, and it involves a lot of sorting and mixing by hand. The office isn't very large, but it serves us well. We have bags of ingredients piled up and small scales for weighing everything out. Being near the college means there is always some activity on the street. Bawadiya Kalan has changed a lot lately, but we just stay focused on our recipes. It is a slow process to get the flavors right. We spend hours drying ingredients and making sure nothing is damp. It is not like a big factory with robots.
