It’s in the Bhiwani district of Haryana. Being behind the Rose Garden is nice because it’s a good landmark for people to find us. Dahiya Niwas is where all the activity happens. It’s a busy place, especially in the early mornings when we’re getting things ready. You can usually smell what’s cooking long before you get to the door. We have a lot of big pots and pans, and there’s always someone chopping something or cleaning up. It’s not a quiet office. It’s a working kitchen and a home combined. We’ve been doing this for a while in Ward Number 2. The neighbors are used to the delivery vans coming and going at odd hours. We don’t have a fancy showroom. Most of our work is done in the back where the heat is. We just focus on the food and making sure the orders are packed up right. It’s hard work and it gets pretty hot in the summer, but we like the bustle of it. Charkhi Dadri is a small enough place that word of mouth is how most people hear about us. We just keep our heads down and keep the stoves going at Dahiya Niwas. That’s our day.
