Chetan Dalajeewala

The place is called Chetan Dalajeewala, and we’re located right in Bhilwara at the Old Haveli. It’s near Holi Ka Than, which is usually a very crowded spot during festivals. The building itself is quite old. You can see the cracks in the walls if you look closely, but it has a lot of character. We spend most of our time dealing with the daily rush. It’s a lot of work getting everything ready in the morning. The smell of the spices and the snacks fills the air early on. Sometimes the heat in the kitchen area gets a bit much, especially in the summer months when Rajasthan gets really hot. I’ve been working here for years, and my hands are always a bit rough from the work. We don't really bother with fancy decorations or anything. The wooden benches are old, and the floor is stone. It’s a simple setup for local people who just want something quick and honest. Sometimes we run out of things by the afternoon because it’s hard to judge how many people will show up. If the weather is nice, the area outside gets very lively. We mostly just keep our heads down and do the work that needs doing. It’s not a big corporate thing, just a local spot where we know most of the people who walk through the door.
