The Spice House

The Spice House is located over in the RBI Layout section of JP Nagar, specifically at 44/1 on Kothnur Road. It is a busy stretch of street and we are right in the thick of it most days. The kitchen is where we spend nearly all of our time. Every morning starts with grinding up spices and getting the sauces ready for the lunch crowd. It is a noisy job with the sound of knives on boards and the heavy hum of the exhaust fans. There are only a few of us working here, but we have been together long enough to know how to stay out of each other's way. When the lunch rush hits, it gets pretty intense because everyone wants their food served immediately. The dining area is quite small and we just have a few basic tables and chairs that we keep as clean as we can. Sometimes the delivery bikes take up all the parking space out front, and we have to go out and ask them to move so our regular customers can actually get inside. We try to keep the food tasting the same every day, even when the prices at the vegetable market start jumping around. It’s just about making a decent meal that people enjoy. We have a lot of regulars who don't even look at the menu anymore; they just sit down and wait for their usual plate. It is a simple way to work.
