Folklore Restaurant

Folklore Restaurant is a small operation found at Carmelaram 121/1. It’s not the easiest place to find if you aren’t looking for it, but the locals know where we are. We have a small kitchen where most of the work happens on two large stoves that have been here since the beginning. The smell of ginger and garlic usually fills the room by ten in the morning. We don’t have any fancy decorations on the walls, just a few old photos and a calendar that someone brought in. The tables are covered with simple cloths that we wash at the end of every shift. Sometimes the sink gets backed up and we have to spend an hour fixing it, which is just part of running a small place like this. We don’t use a computer for orders; we just write everything down on little paper pads and yell them out to the cook. It gets a bit chaotic when three families come in at once, but we manage to get everyone fed eventually. The floor at 121/1 is made of cement, so it stays cool even when it’s boiling outside. We spend our afternoons prepping for the evening crowd, sitting on stools and peeling vegetables while the radio plays in the background. It’s a quiet life for the most part, and we’re happy to keep it that way.
