Down here in Chinthamani, on Mettupunchai Street, you can usually find us by the smell of fried snacks. We are at 1/112, right in the heart of Chinna Anuppanadi. It’s a local business through and through. We make appalams and chips, and we’ve been doing it the same way for years. There’s no big machine doing everything; it involves a lot of manual work and keeping an eye on the heat. The sun in Madurai is perfect for drying out the appalams before they get packed. We have a few people from the neighborhood who come in every day to help with the peeling and slicing. It’s a noisy, happy place to work, even when it’s boiling hot outside. We don't have a website with fancy photos. Our chips are usually sold in simple bags to people who know us. Sometimes the power goes out, or the rain slows down the drying, but we just wait it out and start again. It’s a simple life. We don't talk about missions or visions; we just talk about whether the salt is right or if the oil needs changing. People stop by on their way home to pick up a packet or two. It’s a small operation, and that’s fine with us. We just like making things that people enjoy eating with their meals.
