Shri Misthan Bhandar

Shri Misthan Bhandar has been sitting here near Agra Gate for as long as most people can remember. It is a familiar spot for anyone who lives in this part of town. The shop is simple, with just a few benches for people to sit on if they are waiting for a fresh batch to come out. We don't have any air conditioning or fancy lights. We just use the same old fans we’ve had for years. I usually get here before the sun is up to start the work. It takes time to get everything ready for the day. My hands are usually covered in flour or sugar by mid-morning. We don't use any pre-made mixes; we do everything from scratch using basic ingredients. The noise from the Agra Gate traffic is constant, but it becomes like background music after a while. We have some customers who come every single day for the same thing. They don't even have to tell me what they want anymore. We don't have a sign that glows at night or anything like that. People just know we are here. Sometimes we have a bad day where something burns or a delivery is late, but we just move on. It’s a practical business and we don't try to make it seem like more than it is. We just keep the shop open and do the work. It is enough for us to get by every day.
