Shree Agrawal Sweet Mark is sitting right in Nala Bazar near Laxmi Chowk. If you know the area, it's the spot where the crowd is always moving towards the market. We spend most of our time in the back where the heat from the stoves is constant. Making sweets takes a lot of patience and heavy stirring, so our arms are usually tired by the time evening rolls around. We put out the fresh batches in the glass cases every morning. Sometimes the sugar syrup spills a bit on the floor, so it gets sticky, but that’s just how a sweet shop is. People coming from the chowk often pop in for a quick box of something for their families. We don't use any fancy machines, just the same big pans we’ve had for years. The noise from Nala Bazar is always coming through the front door, bikes honking and people shouting. It’s a loud place to work but we are used to it by now. My father started this and now we just keep it going. We don’t talk about being the best or anything, we just make the laddoos and barfis the way we were taught. Some days are slower than others, especially when it's very hot outside and nobody wants to eat heavy stuff. But usually, there is enough work to keep us all busy until we lock up at night. We clean the counters and get the milk ready for the next day. It’s a long day but it feels good to see the trays empty.
