Nathhilal Jain Halwai

Nathhilal Jain Halwai is a traditional spot located in Kesarganj. We’ve been operating out of this same building for a long time. Everything we do is done in the old way. We have these massive iron vats, or kadhais, that have been used for years. We don't have many modern gadgets. Most of the work is done by hand, stirring the milk for hours until it thickens up just right. The heat in the kitchen can be intense, but we’re used to it. In Kesarganj, there are plenty of places to eat, but people come to us when they want something that hasn't changed in twenty years. We don't do any social media or anything like that. Our customers are our neighbors and their families. We usually have a few people sitting on the bench outside waiting for a fresh batch to come out. The floor is made of old stone and the ceiling is high to let the steam out. We don't worry about being the fastest or the biggest. We just worry about the quality of what we put in the display case. If it’s not right, we don’t sell it. It’s a simple rule we live by. Sometimes we close early if we're tired or if we have a family event to go to. That’s the benefit of being a small shop in a place like Kesarganj.
