Manali Sweets is right on the corner of Phool Gali in Nala Bazar. It is a very busy corner because of all the flower sellers nearby. The smell of the flowers and the smell of our cooking sort of mix together in the air. I took over this place from my uncle. The shop isn't very wide, but it goes back quite a bit into the building. We keep our supplies stacked against the walls because there isn't much storage space. Every morning, the workers start by cleaning the big vats and lighting the fires. It’s a lot of physical work, lifting heavy bags of sugar and stirring big pots for hours. We don't have any uniforms or a corporate look. We just wear what is comfortable for the work. The shop gets crowded in the evenings when the market is full. Sometimes it’s hard to hear the customers over the shouting in the street, but we manage. We don't have a phone line for the shop, so if someone wants to talk to us, they have to come by. We like it that way. It keeps things simple. We don't spend any time thinking about branding. We just focus on making enough for the day and keeping the glass cases full. It’s an honest way to make a living and we have been doing it this way for a long time. That is our shop.
