Kishangarh is a busy place, and being at Purani Mill Choraha means we are right at the heart of the action. The old mill area has a lot of history, and we’ve been part of this intersection for a good while. Our shop is where we spend almost all our time. We wake up early to start the frying because the namkeen needs to cool down before we can pack it. There is a lot of steam and heat in the kitchen, but we’re used to it by now. We don't have a fancy website or any corporate offices. It’s just the shop floor and the workspace in the back. Customers come in and out all day, some looking for a quick snack and others buying kilos of sweets for a wedding or a party. We try to keep the counters looking full, though some days we sell out of the popular items by mid-afternoon. If you walk past Purani Mill Choraha, you can usually smell the spices we use. We don't use any secret recipes, just the ones we learned a long time ago from our elders. It’s a lot of hard work, especially when it’s hot outside, but it keeps us busy. We like the bustle of the choraha and the people who live and work around here. It’s a simple business for simple people who want something tasty to eat during their break.
