Kanaha Milk Parlour & Sweet Corner

Our place is tucked into Nala Bazar in Chandravardal Nagar 10. It’s a pretty lively area, and we start our day way before the sun is even up. The milk trucks come early, and we have to get everything moved inside and into the coolers before it gets too warm out. We handle a lot of fresh dairy every single day. The back part of the shop is where we make the sweets. There is usually a big iron vat of milk simmering away to make khoya or rabri. It takes a long time and someone has to stand there and stir it so it doesn't burn on the bottom. We sell things like curd, paneer, and all the traditional sweets that people around here like. The floor is made of stone and we have to scrub it down a few times a day because milk spills are just part of the job. It’s not a fancy parlor with bright lights. We have some old refrigerators and a glass counter where we display the sweets. Sometimes the power goes out and we have to work fast to keep everything cold. People from the neighborhood come in for their morning milk or a bit of dessert after dinner. It’s a noisy street with scooters and people shouting, but inside it smells like sugar and boiled milk. We just keep things moving and try to stay organized with the buckets and the cans.
