Jai Ambey Sweets

Out here on Pushkar Road, things feel a bit different. Jai Ambey Sweets is in Shambhu Nagar, near the Kotda area. It’s a bit away from the main city center, but it’s still busy enough. We get a lot of people who are on their way out to Pushkar or coming back from there. They’re often looking for a snack for the road. The shop is just a basic building. We haven’t done much to it over the years. We have the stove in one corner and the display case in the other. I spend most of my time tending to the milk. You have to watch it constantly or it will burn. That’s the worst thing that can happen. My father taught me how to tell when it's ready just by the sound of the bubbles in the pan. It sounds strange but it works. We don't have a huge variety, just the things we know how to make well. Some days are slow, especially when it’s really hot and nobody wants to be outside. We just sit under the fan and wait for the sun to go down. Then it picks up in the evening when it cools down. People from Shambhu Nagar come out for a walk and stop by for a bit. We know most of them by name. It’s a quiet kind of business. We don’t have any big plans to expand or anything. We’re just happy being here in Kotda.
