Gupta Sweets

Gupta Sweets is right there at Madar Gate. If you walk past in the morning, you can usually smell the sugar syrup and the milk boiling in the big iron vats. We have a small kitchen in the back where the heat is always high. I spend my time checking the trays of barfi and making sure the laddoos are rolled right. We use a lot of silver foil and nuts for the toppings. The glass display case in the front gets foggy when the weather is cold. It’s a busy spot because Madar Gate is where everyone goes to shop for clothes and shoes, so they stop here when they get hungry. We have a couple of benches outside, but most people just stand and eat their snacks. My apron is usually covered in flour by noon. We don’t do anything fancy with the packaging, just the standard cardboard boxes tied with a bit of string. Sometimes we run out of the popular things before the sun even goes down, and we just have to tell people to come back tomorrow. It’s a lot of manual work, stirring the heavy pots and lifting the trays. The floor can get a bit sticky from the syrup, so we are always washing it down. It’s been our family business for a while, and we just keep doing what we know. People come for the taste they remember from years ago.
