The road at Anchbatti Churah is always moving. Garg Misthan Bhandar sits right on the Nasirabad Sadar Bazar Road. We see a lot of traffic passing through. Number 52, that’s us. It’s a busy spot, especially in the mornings when everyone is heading to work or the market. We keep the sweets in the glass cases where they can be seen from the street. The sun hits the front of the shop in the afternoon, so we have to be careful about where we put things. It’s a lot of standing on your feet all day. We don't have a big staff, just a few of us doing everything from cooking to cleaning. The pots are big and heavy. When we’re making the syrup, the whole place gets humid and hot. You just deal with it. We get regular customers who live nearby and travelers who are just passing through the chouraha. They usually want something quick to eat. We don’t talk much, just get the orders done. The noise from the road is constant, so you have to speak up a bit. By the end of the day, we’re all pretty tired. We pack up what’s left and get ready for the next morning. It’s been this way for a long time. The street changes and new shops come and go, but we’re still here at the crossroads doing our thing. It’s just our way of life here.
