Bansal Sweet is tucked away in the Dhan Mandi area, right near Dargaha Bazar. It is a very busy part of the city, especially during the festival seasons or when there are a lot of visitors around. The shop has been here for a long time. It’s not a very big place, so we have to use every inch of space we have for the kitchen and the counter. I spend most of my day right here, watching the street and talking to the people who stop by. We don't have a big team, just a few local guys who know how to handle the heavy pots and pans. Working in Dhan Mandi means you have to be ready for crowds at any time. We don't bother with fancy packaging or logos. We just use plain boxes and paper bags. Sometimes the power goes out and we have to use candles, but we keep working anyway. The heat from the stoves is always there, but it feels normal after so many years. We buy our milk from the same dairy we have used for a decade. It’s a steady way of living. We don't have a manager or a marketing plan. We just open the doors in the morning and see what the day brings. Most of our customers are folks who are already in the market for their groceries and just stop by on their way home. We are here daily.
