The dairy business starts very early in the morning. Most of us are here long before the sun comes up. There is a specific smell to the place—fresh milk and the cold air from the refrigeration. The floors are always a bit wet because we wash them down so often. We have these large metal tanks and pipes everywhere. It’s a very practical space. We don't have a fancy waiting room. Most people who come here are drivers or suppliers. We have a small office area tucked in the back where the ledgers are kept. It gets noisy with the machinery and the trucks idling outside. We’ve been on this By Pass Road location for quite a while now. Everyone in the area knows the Bhole Baba building. It’s a landmark of sorts. The work is constant because the milk doesn't wait for anyone. We work in shifts to make sure everything is handled right. It’s not a glamorous job, but it’s essential. We just focus on getting the product out and keeping the place clean. The Heritage Hospital nearby is a constant reminder of how much goes on in this neighborhood while we are busy with our milk tanks. By Pass Road never really sleeps, and in this business, neither do we.
