Every morning starts before the sun is even up at H. No -9-019 in Ashok Nagar. I have to get everything ready at the shop in Pakhal because people around here like to get their meat early before the day gets too hot. The knives need sharpening and the floors have to be scrubbed down first thing. It’s a small place, but it serves the local Khanapur folks who have been coming to me for years. You won't find any fancy packaging or bright lights here, just a simple counter and the tools of the trade. Dealing with poultry is hard work and it stays busy, especially on the weekends when everyone is cooking for their families. My clothes usually end up smelling like the shop by the time I head home, but that’s just part of the job. I talk to the customers about their day while I'm working; most of them are neighbors anyway. It’s noisy with the sounds from the street and the birds, but it’s a rhythm I’ve grown to like. We don’t have any big delivery trucks, people just stop by on their scooters or walk over from nearby houses. Sometimes the birds are a bit troublesome, but we manage. It’s a basic business that keeps the kitchen fires burning in this part of town, and I’m glad to be the one running it. When the shutters go down, I'm tired, but it's a good kind of tired knowing the day went well.
