Our place is located in Sector-2 of Vashi, at unit Ss4-121. Bikaner House is usually a busy spot, especially during the festive seasons. The air always smells like fried snacks and sugar. We have a kitchen in the back and a small counter in the front. It’s not a place with lots of seating, mostly people just stand or take things home. We get our supplies delivered early in the morning before the traffic gets bad. The staff has been here for years, and we all know the routine. We wear aprons that get dirty pretty fast from the flour and oil. It’s hard work being on your feet all day, but we are used to it by now. The tiles on the floor are a bit worn down from all the walking. We have a fridge that hums loudly in the corner. Sometimes the line gets long and people get a bit impatient, but we move as fast as we can. Vashi is a good area to be in because there are always people moving around. We don't have fancy packaging, just the regular boxes and bags. It’s a straightforward business. We make the food, we sell it, and then we clean up for the next day. Sometimes we run out of things by the evening. That's just part of how it goes. We close up once the trays are empty and then we start prepping for the next morning's rush and the heat of the ovens.
