We are Mahendra Mithaiwala and we’ve been operating out of our spot at 2-1-15 in Srinagar for quite some time. Making sweets is what we know best. It’s a traditional thing, really. Our day starts very early, way before the sun even comes up, because the milk has to be boiled and the sugar needs to be just right for the first batch. We don't use fancy machines for everything; a lot of it is still done by hand with big spoons and heavy pots because that’s how we learned it from the older generation. The shop in Srinagar is where we spend all our hours. It can get pretty sticky and hot with all the large vats of syrup boiling away, but we don't mind it much. People come to us when they have a wedding or just a small celebration at home, and we like being part of that. We just sell what we make that day. We don't like keeping things on the shelf for too long because the taste changes. Sometimes we run out of certain items by the afternoon, and people get a bit annoyed, but we’d rather sell fresh stuff than anything else. It’s a family-run kind of feel here, and everyone chips in. We’ve seen the neighborhood change quite a bit over the years, but our address stayed the same at 2-1-15. It’s just a simple life of making mithai and talking to the regulars who come in every morning for their fix of something sweet. We don't need much more than that to be happy with our work.
