We operate out of H No 435 right here in Varca. It is a house that has seen a lot of cooking over the years. Varca is a quiet place usually, but things pick up when there is a party or a wedding nearby. We spend a lot of time in the back prep area. It isn't a big commercial factory or anything like that. Just a regular place where we get the big pots out and start chopping vegetables. Most of our days are spent talking about menus or checking if we have enough supplies for the next big event. Sometimes we are up very early to get things started before the sun gets too hot. Dealing with food for lots of people takes a bit of planning, so there is always a list on the table somewhere. We use the space we have. Varca people know where we are, it's a small enough village that word gets around. The kitchen is the main part of the house for us. We don't have a big front office or anything. If you come by, you'll probably find us mid-work with boxes or crates around. It’s hard work, standing on your feet for hours, but it’s what we’ve always done. We just focus on getting the orders right and making sure the transport is ready to go when the food is done. There are always dishes to wash and floors to sweep at the end of the day. That’s just the way it is for us.
