You can find Rosebeer Kitchen & Bar at Flat No. 5 in Khan Market. If you know the area, you know it gets incredibly crowded on the weekends. Our space isn't huge, but we make it work for what we need. It's an old building and sometimes the plumbing gives us a hard time, but that's just part of being in this part of Delhi. We spend most of our time behind the counter or in the small kitchen area. There is always a lot of cleaning to do and crates to move around. It's a lot of physical work that people don't always see. We have a few regulars who come in and we know their names, which makes the days go by a bit faster. The staff here is a mix of young guys and some older folks who have been in the food industry for a long time. We don't have a fancy website or a bunch of social media people. We just focus on making sure the kitchen is running and the drinks are cold. Khan Market is a tough place to run a business because the rent is high and the competition is everywhere, but we just keep our heads down and do our work. It’s a bit cramped in the back office, but we manage. We aren't trying to be the biggest place in town, just a place that is there when you need it. It's about showing up every day and making sure everything is ready for whoever walks through the door.
