Pasta La Vista Foods Private Limited

Pasta La Vista is tucked away in Shahpur Jat, which is a village area in South Delhi known for narrow lanes and old buildings. We are in 216-C, specifically on the lower ground floor in flat G-2. It is a bit of a basement setup, so it stays relatively cool even when the Delhi sun is beating down outside. Making pasta involves a lot of flour and a lot of water, so the floors can get a bit slippery if we are not careful. We have our machines set up in the main room and some drying racks along the walls. The space is a bit cramped, but we have figured out a rhythm that works for us. Most people find us by word of mouth because Shahpur Jat is a maze. We spend our mornings mixing dough and our afternoons cutting it into different shapes. It is a manual process and our arms get tired by the end of the day. Sometimes we forget to order more semolina and have to run out to the local market to find some. It is just a few of us working here, trying to get the orders ready for the cafes that buy from us. We do not have any fancy signs, just a small one on the door. It is a quiet life in a busy village.
