You can find us on the first floor of E-57 in Lajpat Nagar-II. This is one of the busiest markets in New Delhi, so there is always a lot of noise and energy coming up from the street. Insanity Restaurants is a small team, and we spend most of our time in the kitchen or handling the seating area upstairs. Being on the first floor means people have to walk up the stairs, but it gives them a good view of the shoppers below. The kitchen is compact, so we have to move fast and stay out of each other's way. We are constantly dealing with the lunch and dinner crowds, which can be a bit overwhelming when everyone arrives at once. Sometimes the air conditioning struggles to keep up with the crowd, but we do our best to keep it comfortable. We do not have a big corporate office; our meetings usually happen over a quick cup of chai in the morning before the customers start coming in. The menu is based on what we like to eat ourselves. It is a lot of cleaning, cooking, and shouting orders back and forth. Running a restaurant in South Delhi is a challenge every day, but we are used to the pace by now. It is just our daily routine in the middle of the market chaos.
