Apno Rajasthani

Down in Neb Sarai, at 186/2, that is where we have set up Apno Rajasthani. It is not in the middle of a big shopping mall or anything fancy, just a spot on a regular street where people live. We focus on the kind of stuff we grew up eating. It is mostly just us working in the back and making sure everything is ready for whoever happens to come in that day. Neb Sarai can be a bit dusty and the roads are not always in the best shape, but we like it here well enough. It feels like a real neighborhood where people actually know each other. We do not have a big marketing team or anyone telling us how we should talk to people. We just write down what we have made on a small board and hope people like it. The kitchen is quite small, so it gets pretty hot in there during the afternoon. We try to keep the place clean and welcoming, but it is a working kitchen, so there is always a bit of a bustle. Sometimes we run out of a certain dish much earlier than we expected because we didn't make enough that morning, but that is just how it goes when you are doing things by hand. We are not trying to win any big awards or anything. We just want to serve the people who live around 186/2. It is a simple business, really. We show up, we cook, we clean, and we go home. That is about it for us.
