If you head toward Mandhala in the Baddi area, you’ll find us. We are located at Bhag Singh’s place in Kulhariwala village. It’s an industrial sort of area but we are tucked away a bit. We deal with bread and bakery items. The work starts very early because bread doesn't wait for anyone. The smell of yeast and flour is pretty much stuck in our clothes now. We don't have any high-tech robots. It’s mostly us working with our hands and keeping an eye on the ovens. Baddi is a busy place with a lot of factories, so there's always a lot of dust and traffic. We try to keep our little corner clean and organized. Sometimes the dough doesn't rise right because of the humidity, and we have to start over. It can be frustrating, but that’s baking for you. We are a small team and we’ve known each other for years. We don't have a fancy website or a big sales team. Most people find out about us through word of mouth or by seeing our delivery van. We just focus on getting the loaves out on time so they are fresh when they reach the stores. It’s a long day, but seeing the finished bread on the cooling racks feels good. Then we clean the mixers and get ready to do it all again tomorrow.
