Our setup is located in Kushondhi, over in the Hathuwa area of Gopalganj. It’s based at Bharat Chaudhary’s place. We do a lot of catering work for local events and gatherings around Mirganj. It’s usually pretty hectic, especially during the wedding season when everyone wants things done at once. We spend most of our time in the kitchen or loading up the vans. Cooking for big groups is hard work and the days are long. We don't have a big corporate headquarters, just our workspace here in the village. Sometimes the orders are small, maybe just for a family lunch, and other times it's hundreds of plates. We try to keep things simple. Dealing with food means you have to stay on your toes. We worry about the ingredients and making sure the stoves are hot. There’s always a lot of washing up to do afterwards, which nobody likes, but it’s part of the job. Most of us grew up around here, so we know what people like to eat. We aren't using any fancy tech, just standard pots and pans. If a delivery is late because of the roads, we just have to figure it out. It’s a bit messy sometimes and things don’t always go perfect. But we get the food out. Being in Gopalganj, you get used to the pace of life. We just want to keep the business going one event at a time.
