We have been making different kinds of snacks here in Sheoganj for quite a while now. The shop is basically just a big room where we do all the frying and the packing. You can usually smell the besan and the hot oil from all the way down the street. It gets really hot in the back during the summer months, but we have to keep the big vats going to stay ahead of the demand. We make a lot of sev and different mixtures that people take home for their evening tea. Most of our customers are locals who have been buying from us since they were kids. We don't really bother with any fancy packaging or labels. We just put the namkeen in clear plastic bags and tie them up with a bit of string or heat seal them if we have the time. The floor is always a bit slippery with oil no matter how much we scrub it at the end of the shift. We get our spices from the local market and grind them ourselves because it tastes better that way. It is a lot of hard work lifting the heavy sacks of flour every morning. Sometimes we run out of the popular stuff by lunchtime and have to tell people to come back tomorrow. It is just a regular local business and we don't try to make it anything more than it is.
