Chef(Taj Ambassador Delhi)

I’ve been working as a chef for a long time now. My name is Mohd Azam Khan and my father is Mohd Rasheed Khan. We are from Dilazak in Shahjahanpur. It’s quite a way from the big hotels in Delhi but that is where my work life is centered. I spend a lot of my time thinking about food and how things are run in the kitchen at the Taj Ambassador. Sometimes I use the email address mumbaihours at yahoo.co.in to keep in touch with people since I move around a bit. Being a chef is not just about the cooking part, it's the prep and the heat and making sure everything is ready before the guests arrive. Back home in Shahjahanpur, life is slower, but in the kitchen, it is always fast. I started out small and just kept going. It's hard work, standing on your feet all day, but you get used to it. My family knows how much I work. People ask why I do it, but it’s just what I know. We don’t have fancy signs or anything. It’s just me and the work I do. Most days I am just focused on the next meal or the next shift coming up. If you need to find me, I’m usually busy with something in the kitchen or checking on supplies. It’s a busy life but it is mine. I try to stay humble and just do what needs to be done every single day without complaining much.
