Sahay Foods is situated on Khanka Road, very close to D.S. College. Because of the college, we get a lot of young people coming by throughout the day. The road is always lively, especially when classes let out. We spend most of our time in the back where the cooking and prepping happen. It’s a hot environment with the stoves going, but you get used to it after a while. We focus on making food that people actually want to eat every day. Nothing too fancy, just good, honest meals. The morning starts early with the delivery of fresh ingredients. We’re often still chopping vegetables when the first customers start peering in. The kitchen isn't huge, so we have to be very efficient with how we move around each other. We’ve had the same few people working the counters for years. We don't have a massive menu with hundreds of items. We just do what we know how to do well. Sometimes the college students are in a huge rush and we have to move fast to keep them happy. Other times, it's quiet and we can take a break. The smell of spices and frying food is pretty much stuck in our clothes. It’s a simple business on a busy street, and we just try to make sure every plate we serve is something we’d be happy to eat ourselves.
