We are based in unit C-169 in the Phase 8 B Industrial Area of S.A.S. Nagar. It is one of those parts of town where every building looks a bit like the next one. We have got a yard where the milk tankers come in early in the morning, sometimes well before the sun is even up. You can hear the engines idling while we get the pipes and the tanks ready. The office is just a couple of small rooms with some filing cabinets and an old calendar on the wall. We spend a lot of time checking the temperatures and making sure the logs are filled out correctly. It is a lot of routine work, but it has to be done right. We do not have a big fancy lobby for visitors to sit in. Usually, people just come to the side door if they need to talk to one of us. We have got a small team, and everyone knows exactly what their job is. The floor is usually wet from the cleaning we do between different batches. We do not use any big words to describe what we do here. We just process the milk and get it ready for the next stage of the journey. Sometimes the computers act up, and we have to do things the old-fashioned way for a bit. It is loud with the cooling units running.
