Khalsa Dhaba

We sit right on the G T Road in Rampur, which means we see a lot of faces passing through Milk City. This dhaba has been here through many rainy seasons and hot summers. The trucks pull in at all hours and we make sure the tea is always hot. It isn't a quiet place. There is always the sound of engines and people talking loudly over their plates. We serve the kind of food that fills you up when you have a long drive ahead. The dal is always simmering in a big pot and the rotis come out fast. I grew up around these tables and now I run the place with my family. We don’t have air conditioning or soft chairs, just wooden benches and food. Some people stop here because they’ve been doing it for twenty years. They know exactly what it’s going to taste like before they even sit down. We use the same spices we always have. The G T Road is a long one, but we like to think of our spot as a steady point for anyone traveling through 244901. It gets dusty sometimes with all the traffic, but we keep the tables wiped down as best as we can. We’re just a regular road-side dhaba doing things the old way without any fuss.
