Pratap Society is a fairly ordinary neighborhood, and that is where we do all our work. You would not think much of it from the outside. We started out just messing around with different recipes in a small kitchen. Now, the whole place usually smells like cocoa and sugar, which I suppose is better than most jobs. We spend a lot of time tempering chocolate and making sure the molds are clean. It is a lot of repetitive movement, pouring and tapping out air bubbles so the bars look okay. Sometimes the chocolate does not set right because the humidity in the air is too high, and we have to start the whole batch over. It is frustrating but that is just part of it. We have a few refrigerators that hum loudly all day. Our tables are stainless steel and they get messy fast with spills and cocoa powder. It is just us here, usually wearing aprons that are covered in brown smudges. We do not have a big storefront with neon lights or anything. People mostly find us by word of mouth or they live nearby in the society. When the weather gets really hot, we have to be very careful about moving anything because it melts in seconds. We try to keep things organized, but there are always boxes and wrappers piling up near the back door. It is a small operation, just making sweets and trying to keep the kitchen cool enough to work.
