We are over on 31 Recreation Road in Choubey Colony, which is usually a busy little stretch. Mitthi Foods started because we wanted to have a place where we could just make good food without too much fuss. The kitchen isn't huge, but we make it work. Most days, the smell of whatever is cooking starts drifting out to the street by ten in the morning. We spend a lot of time chopping vegetables and getting things ready before the lunch rush starts. It can get a bit cramped when everyone is working at once, but we’ve got a system that mostly keeps us from bumping into each other. The counters are usually covered in flour or spices, depending on what the menu looks like that day. We aren't trying to be a fancy restaurant with waiters in suits or anything. It's just a local spot. People from the colony come by, and we know many of them by name. Sometimes the sink leaks a little, and the delivery bike out front has a squeaky chain, but the food is always fresh. We buy our supplies from the market nearby every couple of days. We don't have a big corporate team, just a few of us who know how to cook. It’s a lot of standing on your feet and dealing with the heat from the stoves, but that’s just how it goes in this food business.
