You can find Advance Cafe near the Jama Masjid in Khazanchi Hat. It is a busy corner and there is always something to see out the front door. We started this place because we wanted a spot where people could just sit and have something to eat or drink without any fuss. It isn't a high-end restaurant with cloth napkins. It’s more of a place where you grab a quick bite or sit for a bit when you're tired of walking around the market. We spend a lot of time in the kitchen making sure everything is ready for the lunch rush. The stove is always going and the smell of food fills the air all day long. Sometimes we run out of things and have to tell people we're sorry, but that’s just how it goes in a small kitchen. We know most of the regulars by name and they know how we like to run things. The chairs don't all match and the floor has seen better days, but it’s a comfortable enough spot. We just keep the coffee hot and the food simple. It is a lot of work, standing on our feet and cleaning up after the rush dies down, but we enjoy the rhythm of it. Being near the masjid means we see a lot of people passing through. The fan on the ceiling makes a bit of a clicking noise, but we’ve stopped noticing it. We wash the dishes by hand in the back.
