Kadhai is the name we put on the front of our place here in Aundh. We are located in Ratanpole, and the shop covers the spaces at 129, 130, and 66. It sounds like a lot of space, but it’s actually just a few connected rooms where we do all our cooking and serving. Aundh is a busy area, and Ratanpole always has people walking around looking for something to eat. I am usually in the kitchen area, making sure the burners are going and the supplies are stocked up. The floors are made of stone and they get quite slippery if we aren't careful with the cleaning. We don't have a big corporate office or anything, just a small desk in the corner where I handle the bills and the phone calls. Sometimes the delivery trucks block the entrance to 129, and we have to go out and ask them to move so customers can get inside. At Kadhai, we just focus on the food we are making that day. The walls are painted a simple off-white, and the chairs are just basic wood that we’ve had since we opened. We don’t have fancy uniforms, just some aprons that get stained pretty quickly. It’s a loud, hot, and busy environment, but we like the energy of it. People come to us because they know we are always there at Ratanpole, doing the same thing we’ve done for years.
