Eva Kitchen 12

Down in Dhayari 128, you’ll find Eva Kitchen 12. We spend most of our hours in the kitchen area preparing things. It’s not a huge place but we make it work with the space we have. The stoves are usually going from early on and the smell of spices is always in the air. We aren't professional chefs with tall hats, just people who know how to cook a good meal. The menu is simple because we prefer doing a few things well rather than having a hundred items. We source our vegetables and meat from the local markets nearby. Some days the delivery is late and we have to scramble to get everything ready on time. It gets hot in there, especially during the lunch rush when everyone wants their food at once. We have a small team and we all pitch in with the washing and the chopping. Sometimes we try out a new recipe and see if the regulars like it. The floor is usually a bit wet from cleaning and there’s always a stack of dishes waiting. We don't have a fancy dining room, it's more about the food itself and getting it to the table. People in Dhayari seem to like what we're doing and they keep coming back for more. It’s hard work being on your feet all day but it's satisfying when the plates come back empty. We just keep the kitchen running as best as we can.
